Alright friends, let's face it. I don't like to cook. I know so many people who are gifted in the art of food and love to create with our most basic and necessary art form, but the gene passed me right by. I tend to eat what is the quickest and easiest to make and don't take the time to become creative in the kitchen. As the result of this, I am trying to find many meals that I can easily pre-make or throw in my wonderful crockpots. Here is my first one!
I was very successful at Weight Watchers a few years ago, and the biggest thing that I took out of it was their amazing zero point veggie soup. My favorite part about it included the fact that you chop up veggies, through them together, and you have soup, tada!
Step one: Get lots of veggies
For this soup, I used:
-2 zucchini
-1 yellow squash
-1/2 an onion (I don't like onions, use more if you like them)
-1 package on mushrooms
-Some cabbage (can you tell how exact my measurements are?)
-2 1/2 green peppers (I ate the other half, oops)
-2 cartons of low sodium chicken broth (Not GF, caution)
-Basil, garlic, parsley, bay leaves
-1 can of chickpeas for extra fiber and protein
-1 small can of tomato paste to jazz it up
-some water to make the soup soupy-er
Step 2: chop up the veggies
I cut everything up and threw them into a bowl. Use a nice, sharp knife, such as my awesome Cutco Christmas present from my M-I-L, but please do not cut off a finger. Fingers are not South Beach approved.
Step three: Throw all of the ingredients into (a) crockpot(s), including chickpeas, spices, tomato paste, chicken broth, and water.
My hubby got me a three crock crock-pot cooker for Christmas this year. (For the girl who doesn't cook, I got a lot of kitchen items!) It is the most amazing appliance in my kitchen. Each crock is 2.5q, perfect for making sides, dips, or separating main dishes. My thinking behind making soup in three crocks: I can freeze two of the soups and eat one this week...no need to make a new pot of soup each week!
Step four: add heat...trust me, soup is better when hot.

The beauty of this soup is that you can use almost any veggie and it tastes just as wonderful. User beware, if you are following a SB diet, avoid carrots and corn in phase 1.
