Minor hiccup in the plan....

So, for all of my followers out there (all three or so of you :-P) I had a minor hiccup in my healthy eating plan...that actually had a reverse effect...the infamous stomach bug! As uncomfortable as I've been, today was weigh in day and I have lost 6lbs..woo hoo! I am hoping that my system is getting back on track!

Tonight's dinner will be salsa chicken...my fantastic hubby actually said to me this morning, 'Can you eat chicken? I want to help you with this diet thing and request foods you can eat.' 


Salsa Chicken

-1-2 boneless skinless chicken breasts (or more, depending on how many you are feeding
-1 jar of salsa...any heat, I use mild
-FF shredded Mozzarella cheese 

ok...here is the hard part. Put thawed chicken into an oven safe dish (I love my pyrex class dishes) Cover it with salsa. Cover it with cheese. Cook in oven at 375 for 15-20 mins or until thoroughly cooked. Enjoy!

Low cal and south beach (and man) approved! You also trick your loved ones by getting veggies in with the salsa! :)

I know I'm not supposed to go on the scale yet...

But I've lost 2.2 pounds so far!!! It's mostly water weight I'm sure, but it's still exciting! I've decided to count calories and restrict my gluten based products...an it's working well!!

The most dreaded day....first weigh-in day...

Well, today was the day that I couldn't put off any longer...weigh in day. The number, which I was fairly aware of, was shocking. I think that my scale is telling a big, fat lie (no pun intended har har har!)

In response to the shock I got at 5:30 this morning, I started my South Beach Diet-phase one AND went to the gym for Zumba. Both of which I am not crazy about, but I keep thinking of that light at the end of the tunnel....

Vegetable Quiche Cups

Breakfast..who has time for it?! Well, when it is premade and you can throw it in the microwave, you can make time! Below is a wonderful SB breakfast recipe that is easy to make and easy to freeze. Enjoy!

Vegetable Quiche Cups
1 1/2 cups of egg beaters
1 package (10 or 12 oz of broccoli or spinach
1 1/2 cups of low fat or fat free shredded cheese
little bit of onion for taste
1 12 slot muffin tin
non-stick spray





















Step one: Preheat oven to 350 and cook broccoli in microwave (I had a steam fresh bag, made life easier)

















Step two: Mix ingredients together

























Step three: Spray muffin tin with non-stick spray


























Step four: Pour mixture into muffin tin, 12 equal parts


























Step five: bake for 20 minutes or until fully cooked and fluffy

So when they are done, eat at least two per morning to fill your SB phase 1 breakfast requirement. These freeze very well, I just throw them all in a gallon sized bag and take 2 out at a time, throw them in the microwave for a minute or two and eat!

Weight Watcher's Famous Zero Point Soup....with a SB twist!

Alright friends, let's face it. I don't like to cook. I know so many people who are gifted in the art of food and love to create with our most basic and necessary art form, but the gene passed me right by. I tend to eat what is the quickest and easiest to make and don't take the time to become creative in the kitchen. As the result of this, I am trying to find many meals that I can easily pre-make or throw in my wonderful crockpots. Here is my first one!

I was very successful at Weight Watchers a few years ago, and the biggest thing that I took out of it was their amazing zero point veggie soup. My favorite part about it included the fact that you chop up veggies, through them together, and you have soup, tada!

Step one: Get lots of veggies




















For this soup, I used:
-2 zucchini
-1 yellow squash
-1/2 an onion (I don't like onions, use more if you like them)
-1 package on mushrooms
-Some cabbage (can you tell how exact my measurements are?)
-2 1/2 green peppers (I ate the other half, oops)
-2 cartons of low sodium chicken broth (Not GF, caution)
-Basil, garlic, parsley, bay leaves
-1 can of chickpeas for extra fiber and protein
-1 small can of tomato paste to jazz it up
-some water to make the soup soupy-er



Step 2: chop up the veggies




















I cut everything up and threw them into a bowl. Use a nice, sharp knife, such as my awesome Cutco Christmas present from my M-I-L, but please do not cut off a finger. Fingers are not South Beach approved.


Step three: Throw all of the ingredients into (a) crockpot(s), including chickpeas, spices, tomato paste, chicken broth, and water.


























My hubby got me a three crock crock-pot cooker for Christmas this year. (For the girl who doesn't cook, I got a lot of kitchen items!) It is the most amazing appliance in my kitchen. Each crock is 2.5q, perfect for making sides, dips, or separating main dishes. My thinking behind making soup in three crocks: I can freeze two of the soups and eat one this week...no need to make a new pot of soup each week!

Step four: add heat...trust me, soup is better when hot.

The beauty of this soup is that you can use almost any veggie and it tastes just as wonderful. User beware, if you are following a SB diet, avoid carrots and corn in phase 1.

The answer: Enough that I wouldn't need a car...you would be able to roll me from place to place :-P

Today was grocery shopping day...and in classic CNY form when snow is impending, the store was PACKED! I managed to make it out alive, with many gluten free/ South Beach savvy foods. My momma, who is also going to try SB again was a big help, I was able to ask her 'can I eat...' and she always had an answer! I came home with lots of yummy veggies, low fat dairy, and protein options. I already had meat in my freezer. 

If you are thinking about going a South Beach Diet route, *this website* has been the most helpful. It tells you the ins and the outs of the plan and you can print the lists to post on your fridge.

Hello 2012, I guess I should get started!

I know that everyone is saying this...my new year's resolution is to lose weight! I figured I should finally join the bandwagon and work on my own weight too. This blog is going to help me to share my progress, recipes, and make me somewhat accountable for what I am doing. My goal is 40lbs by a wonderful friend's wedding in October while working on eliminating gluten from my diet....here goes nothing!
